What a magnificent journey, our intentions were simple, to touch people, to make them happy, full and moved, to give meaning, to re-enchant ….. We didn’t do everything right but we did it well anyway!
Nothing in this world exists by and for itself, a letter, a word, all our gestures, feelings, our entire lives, everything is “addressed” ….
So thank you to each and every one of those who have visited us since day one, thank you from the bottom of our heart.
Thank you to all those who have offered us material to work with and inspiration to raise us, all the artisans, farmers, fishermen, breeders, artists, chefs, thinkers, photographers, designers etc ….
Thank you to all the staff of ESqUISSE past and present for making this restaurant what it is.
To all the cuisine and pastry team who work in the shadow to transform all these materials, to all the service team, who have the immense task of weaving an ephemeral link with those who visit us, without them the cuisine would be a lost letter.
