Taneto’s Sunday Market (A project focusing on agriculture and food centered on heirloom vegetables)

On March 29th, Esquisse Chef de Cuisine Yui Yamamoto participated in Taneto’s Sunday Market in Chijiwa, Unzen City.

Late March is the time when the diversity and vitality of heirloom vegetables can be best experienced. Using robust Unzen vegetables, citrus fruits, and local ingredients, she sold dishes and sweets that highlighted the deliciousness and appeal of the ingredients.

Esquisse strives to understand the production and culture behind food, and supports the activities of local producers and food culture. In recent years, due to the effects of global warming, cultivating heirloom varieties has become increasingly difficult. However, we believe that the beauty and value lie in the practices, landscapes, lifestyles, and culture that have continued in the land.
