Chef Lionel Beccat was selected for  EARTH MART × Forbes JAPAN’s  “25 People Shining the Future of Food.”  at the cruise event “EARTH MART FORUM”, the signature event of “EARTHMART” which garnered acclaim at the Osaka-Kansai Expo,

As part of the “Food Future Conference,” where various food-related professionals gathered to discuss the future of food, Lionel Beccat took the stage with Mr. Tomohiro Fujita, Founder and CEO of Chitose Group, for a talk titled “What Should We Protect Now for a World a Thousand Years From Now? A Conversation Between a Chef and a Scientist.”

Additionally, the special dinner within the forum was provided by the RED EGG TEAM. Chef de Cuisine Yui Yamamoto served “Ballroom Dance – Button Shrimp, Daikon Radish, Miso, Fully Ripened Chili Pepper” and for dessert, “Thin Moon – Persimmon, Japanese Sake, Coconut, Gyuhi”.
