ENTROPY | Amadai, paprika, Goya

Amadai of saga brined in saline solution and then fried on the scale, the clear juice of its bones simply bound of its liver.
The red bell pepper is gently candied in oil flavored with condiments, then stuffed with a mixture of feta, sautéd Goya, bean, marjoram, candied garlic, bitter olive oil and very old sherry vinegar
In the green condiment, there is organic arugula, lemon with salt, bitter Goya paste, white cheese.
Entropy: term which characterizes the degree of disorganization, or predictability, of the contents of a system
The higher the entropy of a system is, the less orderly its elements are and the more energy is released in an incoherent way.
I built this plate first without the Goya, it was really delicious, harmonious and deep… but something was wrong, I found it too…. How to say, disciplined.
I wanted to turn it into a kind of chaos, we looked a lot for how to do it and Ugo had the great idea of the Goya, it was sublime, it makes the dish completely explode, aggressing the other elements while sublimating them.
Disorder is beautiful
