February 2, 2019 will be the beginning of a new era, a virtuous moult, the salon of ESqUISSE is deeply remodeled with a new visual narrative, comfort completely redesigned, also two of my oldest friends join our ship, Lionel Lavernhe in time that restaurant manager and Yuichi Goto will be our new pastry chef. Together, always alongside our general manager Eiji Wakabayashi, we will be more than ever a crew filled with the desire to share with you this quest for escape, this great human adventure that is the search for culinary pleasure.

ESqUISSE has enhanced its design taking in the image of nature and the earth while leaving a pure and fresh impression, and welcome you in a refreshing and warm environment that offers you a splendid time.
In collaboration with Naoki Kusumi, renowned Wall Sakan Artist, the atomosphere of the strength of the earth was added by his Wall Art. And with Masanobu Takeishi, the prominent lighting designer, the beautiful lightness and the color changes slowly according to the time to enjoy the dinner.
The restaurant also welcomes a new chef patissier, Yuichi Goto who has experience as chef patissier at TroisGros in Roanne, bringing with him a wealth of knowledge and wonderful dessert for the “finale” of the course.

“Now we have many products that are thin and fast and quick, so it’s why we want you to feel the real thing. In order to give thickness, the wall is painted 5 to 6 times and the surface is scraped to give the taste of sand and gravel material.
The artwork on the entrance expresses the calmness and wildness of nature by the soil.”
